Instructions
- Preheat oven: Preheat the oven to 350°F and spray the baking dish with cooking spray to prevent sticking.
- Mix base: In a large bowl, cream together the softened cream cheese and sour cream until smooth and well combined.
- Add main ingredients: Add the corn kernels, diced red bell pepper, drained green chilies, crumbled bacon, chopped cilantro, chili powder, cumin, salt, pepper, and 1 cup of shredded cheddar cheese to the bowl.
- Combine and spread: Stir all the ingredients thoroughly until evenly mixed, then spread the dip mixture into the prepared baking dish.
- Add cheese topping: Sprinkle the remaining ½ cup of shredded cheddar cheese evenly over the top of the dip.
