  • ¼ cup chopped fresh cilantro

  • 1½ cups shredded cheddar cheese (divided)

Instructions

  1. Preheat oven: Preheat the oven to 350°F and spray the baking dish with cooking spray to prevent sticking.
  2. Mix base: In a large bowl, cream together the softened cream cheese and sour cream until smooth and well combined.
  3. Add main ingredients: Add the corn kernels, diced red bell pepper, drained green chilies, crumbled bacon, chopped cilantro, chili powder, cumin, salt, pepper, and 1 cup of shredded cheddar cheese to the bowl.
  4. Combine and spread: Stir all the ingredients thoroughly until evenly mixed, then spread the dip mixture into the prepared baking dish.
