Scale
Soup Base
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2.2 pounds carrots, peeled and sliced
- 1 medium potato, peeled and diced
- 2 tablespoons fresh ginger, peeled and finely grated
- 4 cups vegetable broth
- 1 cup water
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Juice of 1/2 lemon
Garnish
- Fresh coriander or parsley, chopped
- Coconut cream or yogurt, optional
Instructions
- Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, approximately 4 minutes.
- Bloom Spices: Add the minced garlic and grated ginger to the pot. Cook while stirring frequently for 1 minute until fragrant.
- Build Base: Stir in the sliced carrots and diced potato. Cook for 3 to 4 minutes, stirring occasionally to combine flavors.
- Simmer: Pour in the vegetable broth. Bring to a boil, then reduce heat to a simmer. Cover the pot and cook for 20 to 25 minutes until the carrots and potato are tender.
- Puree: Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, transfer the soup in batches to a countertop blender and blend until creamy.
- Season: Add water to adjust the soup’s consistency as desired. Stir in the lemon juice, salt, and freshly ground black pepper. Taste and adjust seasoning accordingly.
- Serve: Ladle the soup into bowls. Garnish with chopped fresh coriander or parsley. Optionally, drizzle with coconut cream or yogurt for a creamy finish.
Notes
- Use an immersion blender for easy and safe pureeing directly in the pot.
- Add more water or broth if the soup becomes too thick after blending.
- For a spicier kick, add a pinch of cayenne pepper or chili flakes during the sauté step.
- This soup freezes well for up to 3 months.
- Optional toppings like toasted seeds or croutons add texture and crunch.
