Instructions

  1. Sauté Onions: In a large skillet, heat about 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Add Garlic: Add the minced garlic to the skillet and cook for an additional 1 minute to release its aroma.
  3. Brown Ground Beef: Add the ground beef to the skillet and cook until browned, about 5-7 minutes. Drain any excess fat as needed.
  4. Combine Ingredients: Stir in the black beans, diced tomatoes with green chilies, and taco seasoning. Simmer for about 5 minutes, then season with salt and pepper to taste.
  5. Cook Tortellini: In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to the package instructions, about 3-5 minutes, until they float to the surface.
  6. Drain Tortellini: Drain the cooked tortellini and set them aside.
