Instructions
- Prepare the Mashed Potato Mixture: In a large mixing bowl, add the cold or room temperature mashed potatoes and smooth out any large lumps using a spoon. Add the egg, milk or cream, salt, black pepper, and all-purpose flour. Mix everything thoroughly until well combined.
- Add the Cheese and Optional Ingredients: Stir in the grated cheese along with any optional add-ins such as green onions, cooked bacon bits, fresh herbs, or spices. The mixture should be thick enough to scoop; if too loose, add a little more flour to achieve the right consistency.
- Shape the Puff Bites: Using a spoon or small cookie scoop, scoop out portions of the mixture and roll each into small bite-sized balls. Place the formed puff bites evenly on a baking tray lined with parchment paper.
- Choose Your Cooking Method: For baking, preheat your oven to 400°F (200°C), lightly spray the puff bites with oil, and bake for 20–25 minutes, flipping halfway through, until they turn golden brown and crisp. For frying, heat oil to 350°F (175°C) and fry the puff bites in batches for 2–3 minutes until crisp and golden. Drain on paper towels.
