- 2 tbsp oil of your choice
- 3/4 lb turkey breast, cut into bite-size pieces
- 1 onion, chopped
- 4 cloves garlic, chopped
- 1 tsp fresh grated ginger
- 2 tsp coriander
- 1/2 tsp chili powder (optional)
- 1/2 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp turmeric
- 2 tsp cilantro, chopped
- 2 tsp parsley
- 3 packages Kitchen Basics Chicken Bone Broth (about 24 fl oz total)
- 1 cup crushed tomatoes
- 1 carrot, chopped
- 1 celery stalk, chopped
- 2 cups spinach
Instructions
- Prep Vegetables: First, wash and chop the celery and carrot into bite-sized pieces. Chop the onion and garlic cloves finely. Peel and grate fresh ginger root to measure about 1 teaspoon.
- Cook Turkey: Heat 1 tablespoon of oil in a pan over medium-high heat. Add the turkey pieces and cook until they turn lightly golden on all sides. Transfer the cooked turkey onto a separate plate or bowl and set aside.
- Sauté Onion and Garlic: Add the remaining 1 tablespoon of oil to the same pan and keep the heat at medium-high. Add the chopped onion and garlic and sauté until the onion becomes lightly golden and translucent.
- Add Ginger: Stir in the freshly grated ginger and cook for another couple of minutes to release the aromatic flavors.
- Add Spices and Liquids: Sprinkle in the coriander, chili powder (if using), smoked paprika, cumin, and turmeric. Stir well to coat the onion mixture. Then add the crushed tomatoes and all the chicken bone broth. Mix everything thoroughly.
- Add Vegetables and Turkey: Add the chopped carrot, celery, and the cooked turkey pieces back into the pan. Cover the pan and let the soup simmer gently for about 12 to 15 minutes, allowing the flavors to meld and the vegetables to soften.
- Add Spinach: Remove the lid and stir in the fresh spinach. Let the soup simmer for a few more minutes until the spinach wilts and is fully incorporated.
- Serve and Enjoy: Once the spinach has wilted, your Chunky Turkey Spinach Soup is ready to serve. Ladle into bowls and enjoy a warm, flavorful meal.
