Vegetables
- 1 medium carrot, diced into thin half slices (about ½ cup)
- ½ small yellow onion, finely minced (about ¼ cup)
- 1 stalk of celery, finely chopped (¼ cup)
Liquids and Dairy
- 1 tbsp salted butter
- 9 cups water
- 4 ounces cream cheese, cut into chunks
- ½ cup heavy cream
- 2 cups cheddar cheese
Pasta
- 8 oz thin spaghetti, vermicelli, or angel hair pasta
Protein and Seasoning
- 2 cups chopped rotisserie or cooked chicken
- 1 oz packet Ranch seasoning
- 1 pound bacon, cooked and crumbled
- Salt and pepper to taste
Garnish (optional)
- Fresh parsley for garnish
Instructions
- Cook Vegetables: In a large pot, sauté the diced carrot, minced onion, and chopped celery in salted butter over medium heat until the vegetables are soft and fragrant, about 5-7 minutes.
- Add Water and Pasta: Pour 9 cups of water into the pot and bring to a boil. Add the thin spaghetti, vermicelli, or angel hair pasta and cook until the pasta is tender, usually about 6-8 minutes, stirring occasionally to prevent sticking.
- Add Cream Cheese and Cream: Lower the heat to medium-low and stir in the chunks of cream cheese and the heavy cream. Continue stirring until the cream cheese completely melts and the soup becomes creamy and smooth.
- Stir in Cheese and Seasoning: Add the shredded cheddar cheese and the Ranch seasoning packet to the soup, stirring continuously until all the cheese is melted and fully combined into the broth.
- Finish Soup: Mix in the chopped cooked chicken thoroughly. Taste the soup and adjust the seasoning with salt and pepper as desired.
- Serve: Ladle the hot soup into bowls and garnish each serving with the cooked and crumbled bacon, fresh parsley if using, and additional shredded cheddar cheese for extra flavor and texture.
Notes
- Use rotisserie chicken for quick preparation or any leftover cooked chicken.
- The bacon adds a crispy texture and smoky flavor; feel free to adjust the amount per preference.
- The Ranch seasoning packet provides a unique tangy twist—do not omit for best flavor.
- To make the soup thicker, add a little cornstarch slurry when melting the cheese.
- Leftovers can be refrigerated for up to 3 days and reheated gently on the stove.
