- 1 tablespoon olive oil
- 1 medium onion, finely diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
Spices & Seasonings
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt and black pepper, to taste
- Juice of 1/2 lime
Main Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1/2 cup canned diced tomatoes or mild salsa
- 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
To Serve (Optional)
- Fresh cilantro
- Avocado slices
- Sour cream or Greek yogurt
- Warm tortillas or tortilla chips
Instructions
- Sauté The Base: Heat the olive oil in a large skillet over medium heat. Add the diced onion and red bell pepper, cooking for 4 to 5 minutes until they soften and turn lightly golden, creating a flavorful base for the dish.
- Bloom The Spices: Stir in the minced garlic, chili powder, ground cumin, smoked paprika, and dried oregano. Cook for about 30 seconds, allowing the spices to become fragrant and release their aromatic flavors.
- Build The Skillet: Add the drained black beans, corn, and diced tomatoes or salsa to the skillet. Stir well to combine all ingredients and let everything simmer gently for 5 to 7 minutes until it’s warmed through and slightly saucy.
- Finish With Flavor: Season the mixture with salt and black pepper to your taste. Then squeeze in the juice of half a lime, stirring it in to brighten the flavors and add a fresh zing.
- Add Cheese (Optional): Sprinkle the shredded cheese evenly over the skillet. Cover with a lid and cook for an additional 2 to 3 minutes until the cheese has melted beautifully, adding creamy richness.
- Serve: Remove the skillet from heat and serve immediately. Top with fresh cilantro, avocado slices, sour cream or Greek yogurt if desired, and accompany with warm tortillas or tortilla chips for a complete taco-inspired meal.
Notes
- Use any cheese you prefer; Mexican blend or cheddar both work great for melting.
- For extra protein, add cooked shredded chicken or ground beef.
- To make it vegan, omit the cheese or use a dairy-free cheese alternative.
- If you like your dish spicier, add some chopped jalapeños or a dash of hot sauce.
- This recipe is easily doubled for larger gatherings.
