Description

Creamy Avocado Pasta is a delicious and healthy vegan main dish that combines ripe avocados, garlic, lemon juice, and olive oil to create a smooth, flavorful sauce. This quick and easy recipe uses cooked pasta tossed in a creamy avocado sauce, making it perfect for a light yet satisfying meal.

Ingredients

Scale

Pasta

  • 8 ounces pasta (spaghetti, linguine, or your choice)

Sauce

  • 2 ripe avocados, peeled and pitted
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Drain and reserve some pasta water.
  2. Prepare the Avocado Sauce: In a blender or food processor, combine the ripe avocados, minced garlic, lemon juice, and olive oil. Blend until smooth and creamy. Season with salt and pepper to taste.
  3. Toss the Pasta: While the pasta is still hot, transfer it to a large bowl and pour the avocado sauce over it. Toss well to evenly coat the pasta. If the sauce is too thick, add a little reserved pasta water to loosen it to your desired consistency.
  4. Serve: Serve immediately, garnished with extra lemon zest or fresh herbs if desired.

Notes

  • If you prefer a warmer sauce, gently heat the blended sauce on low heat before tossing with pasta, but avoid high heat to maintain creaminess and color.
  • For added flavor, sprinkle with freshly ground black pepper or chili flakes.
  • This dish is best eaten fresh as the avocado sauce can oxidize and darken over time.
  • To make it gluten free, substitute pasta with gluten-free options.
