Description

A quick and comforting creamy salmon pasta dish that combines tender salmon fillets with a luscious cottage cheese sauce, Parmesan cheese, and your choice of vegetables for a satisfying weeknight meal. Ready in just 30 minutes and perfect for a cozy dinner.

Ingredients

Scale

Pasta

  • 8 oz pasta (spaghetti, fettuccine, or your favorite type)

Salmon

  • 2 fillets salmon (6 oz each, fresh or canned)

Sauce

  • 1 cup cottage cheese (can substitute with Greek yogurt or ricotta)
  • 1/4 cup Parmesan cheese (use nutritional yeast for dairy-free option)
  • 2 tbsp olive oil (can substitute with butter)
  • 1/2 cup vegetables (such as spinach or peas)

Instructions

  1. Cook Pasta: Boil salted water in a large pot and cook the pasta according to package instructions until al dente, about 8-10 minutes. Reserve some pasta water before draining.
  2. Sauté Salmon: Heat olive oil in a skillet over medium heat. Cook the salmon fillets for about 3-4 minutes on each side until fully cooked and opaque. Remove the salmon from the skillet, flake it into bite-sized pieces, and set aside.
  3. Prepare Sauce: In the same skillet, add the cottage cheese and a splash of the reserved pasta water. Stir continuously until the mixture is smooth and creamy. Then fold in the Parmesan cheese and vegetables, cooking just until the vegetables are warmed through.
  4. Combine: Add the cooked pasta to the skillet with the creamy sauce. Gently toss to coat the pasta evenly with the sauce. Fold in the flaked salmon carefully to keep the pieces intact.
  5. Serve: Plate the creamy salmon pasta and garnish with additional Parmesan cheese or fresh herbs if desired. Serve immediately while warm and enjoy your comforting meal.

Notes

  • Use fresh salmon fillets for best texture, but canned salmon can be a convenient substitute.
  • Reserve pasta water to help adjust sauce consistency to your liking.
  • Substitute cottage cheese with Greek yogurt or ricotta for a slightly different flavor.
  • Vegetables like spinach, peas, or even asparagus work well in this dish.
  • For a dairy-free version, replace Parmesan with nutritional yeast and use a dairy-free cottage cheese alternative.
