Description

Quick and easy crab melts made with a creamy crab and egg filling, topped with cheddar cheese, broiled to bubbly perfection on toasted English muffins. A delicious and satisfying appetizer or light meal ready in just 15 minutes.

Ingredients

Scale

Filling

  • ½ cup (120 ml) mayonnaise
  • 1 teaspoon (5 ml) lemon juice
  • 1 teaspoon (5 ml) Worcestershire sauce
  • 1 teaspoon (5 ml) Dijon mustard
  • ½ teaspoon (2.5 ml) hot sauce (optional, adjust to taste)
  • Salt and freshly ground pepper, to taste
  • 6 oz (170 g) canned crab meat, drained and flaked
  • 2 hard-boiled eggs, peeled and chopped
  • 2 tablespoons (15 g) finely chopped red onion or shallots
  • 1 tablespoon (4 g) chopped fresh parsley

Topping and Bread

  • 1 cup (115 g) grated cheddar cheese
  • 3 English muffins, split and toasted

Instructions

  1. Prepare the Filling: In a medium bowl, combine the mayonnaise, lemon juice, Worcestershire sauce, Dijon mustard, hot sauce (if using), salt, and pepper. Stir until smooth and well blended.
  2. Mix the Main Ingredients: Add the drained crab meat, chopped boiled eggs, red onion, and parsley. Stir gently to mix all ingredients without breaking them up too much.
  3. Toast the Muffins: While the crab mixture rests, toast the English muffin halves until lightly golden.
  4. Assemble the Melts: Spoon generous portions of the crab mixture onto each muffin half. Sprinkle the tops with grated cheddar cheese.
  5. Broil to Perfection: Place the assembled muffins under a preheated broiler for 3 to 5 minutes, or until the cheese is bubbly and lightly golden.
  6. Serve Hot: Remove carefully from the oven and serve immediately while warm and gooey.

Notes

  • Use canned crab meat for convenience, but fresh crab can be used if available.
  • Adjust the amount of hot sauce to suit your preferred spice level or omit entirely for a milder flavor.
  • Make sure to toast the English muffins well to provide a sturdy base and add crunchiness.
  • Keep an eye on the broiler to avoid burning the cheese.
  • Can be served as an appetizer, snack, or light meal paired with a salad.
