Ingredients
Scale
Beef and Seasoning
- 2 pounds beef stew meat or chuck roast, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- Salt to taste
Sauce
- 2 cups beef broth
- 1 can (10.5 oz) cream of mushroom soup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
Thickening (Optional)
- 1 tablespoon cornstarch
- 2 tablespoons cold water
Noodles and Garnish
- 12 oz egg noodles, cooked separately
- Butter or oil (for tossing noodles)
- Fresh parsley, chopped (for garnish)
Instructions
- Sear Beef: Heat olive oil in a large skillet over medium-high heat. Sear the beef cubes in batches until browned on all sides to develop deep flavor and seal in juices.
- Prepare Slow Cooker: Transfer the seared beef to the slow cooker. Add the finely chopped onion and minced garlic evenly over the beef.
- Mix Sauce: In a bowl, whisk together the beef broth, cream of mushroom soup, Worcestershire sauce, soy sauce, onion powder, garlic powder, and black pepper until smooth and well combined.
- Cook Beef: Pour the sauce over the beef in the crockpot. Cover and cook on LOW for 7–8 hours or on HIGH for 4–5 hours, until the beef is tender and flavorful.
- Thicken Gravy (Optional): About 30 minutes before serving, mix the cornstarch and cold water to create a slurry. Stir this into the crockpot to thicken the gravy, then continue cooking uncovered.
- Cook Noodles: While the beef finishes cooking, prepare the egg noodles according to package instructions. Drain and toss with a bit of butter or oil to prevent sticking and add flavor.
- Serve: Serve the beef tips and thickened gravy spooned generously over the cooked egg noodles. Garnish with freshly chopped parsley for a bright, fresh finish.
Notes
- For extra richness, you can add a splash of heavy cream or sour cream when stirring in the thickening slurry.
- If you prefer a gluten-free option, substitute soy sauce with tamari and use gluten-free noodles.
- Searing the beef beforehand is optional but recommended for deeper flavor.
- Leftovers keep well refrigerated for up to 3 days and freeze nicely for up to 3 months.
- Adjust salt to taste as some broths and sauces may already contain sodium.
