Ingredients
Scale
Chicken and Seasoning
- 2 pounds boneless, skinless chicken thighs
- 1 tablespoon olive oil (or vegetable oil)
- 3 tablespoons Thai seasoning (blend of ground lemongrass, garlic powder, coriander, cumin, ginger, and chili flakes)
Glaze
- ¼ cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon lime juice (freshly squeezed)
- 1 tablespoon sriracha
- 1 tablespoon fresh cilantro, chopped
Instructions
- Preheat the Grill: Set your grill to medium-high heat, approximately 400°F, to ensure the chicken cooks evenly with a nice sear.
- Season the Chicken: Rub the chicken thighs all over with olive oil to help the seasoning stick and prevent sticking to the grill. Sprinkle the Thai seasoning evenly over both sides of each thigh.
- Prepare the Glaze: In a small bowl, whisk together the sweet chili sauce, soy sauce, lime juice, sriracha, and chopped fresh cilantro. This glaze will add layers of tangy, spicy, and sweet flavors.
- Grill the Chicken: Place the seasoned chicken thighs on the grill. Cook for 5 to 6 minutes per side, turning once to develop even grill marks and cook through.
- Apply the Glaze: In the last 2 minutes of grilling, brush half of the glaze onto the chicken thighs, allowing it to caramelize slightly on the heat.
- Check for Doneness and Rest: Remove the chicken from the grill when the internal temperature reaches 160°F. The resting period will allow the temperature to rise to a safe 165°F. Brush the remaining glaze over the chicken, then let the chicken rest on a cutting board for 5 minutes to lock in the juices.
- Serve: Slice or dice the grilled Thai chicken thighs as desired, and serve immediately with your choice of sides.
Notes
- The Thai seasoning can be homemade by combining ground lemongrass, garlic powder, coriander, cumin, ginger, and chili flakes for an authentic taste.
- Make sure to rest the chicken after grilling to ensure maximum juiciness and flavor.
- This chicken pairs beautifully with jasmine rice, grilled vegetables, or a fresh green salad.
- Use a meat thermometer to check the internal temperature to avoid undercooking or overcooking.
- Adjust the amount of sriracha in the glaze to control the heat level per your preference.
