Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper to prevent sticking.
- Mix wet ingredients: In a large bowl, whisk together the milk, whisked eggs, mashed bananas, maple syrup or honey, melted coconut oil, and vanilla extract until the mixture is smooth and well combined.
- Add dry ingredients: Stir in the rolled oats, baking powder, and kosher salt into the wet mixture until everything is evenly incorporated.
- Fold in berries: Gently fold in the berries to the batter, being careful not to crush them if using fresh berries.
- Pour and spread: Pour the oatmeal mixture into the prepared baking dish and spread it out evenly to ensure uniform baking.
- Bake: Place the dish in the preheated oven and bake for 35 to 40 minutes, or until the center is set and the top is lightly golden brown.
