  • 2 Tbsp avocado oil (or another cooking oil)
  • 1 1/2 lbs golden potatoes, diced
  • 1/2 yellow onion, diced
  • 8 oz ham, diced

For the Sauce and Topping

  • 1 Tbsp honey mustard (plus an additional 1 Tbsp for stirring into potatoes)
  • 4 eggs


Instructions

  1. Preheat oven: Set your oven to 400℉ (200℃) to get it ready for baking the finished dish.
  2. Prepare cooking vessel: Choose a cast iron skillet or any oven-safe pan to cook and bake in. Alternatively, use two pans if needed.
  3. Cook ham and onions: Heat the pan over medium-high heat, add oil, then sauté diced yellow onion and ham. Stir often until they develop a nice caramelization for enhanced flavor.
  4. Add honey mustard to ham and onions: Stir in 1 Tbsp honey mustard and cook for another minute to coat the mixture with the sauce. Remove the ham and onions and set aside.
  5. Cook potatoes: Add a bit more oil to the pan, then add the diced potatoes. Season with salt and pepper, cover the pan, and cook over medium heat, stirring occasionally until potatoes are nearly tender.
  6. Finish cooking potatoes: Remove the lid and let the potatoes cook uncovered until just tender. Stir in the remaining 1 Tbsp honey mustard for an extra punch of flavor.
  7. Combine ham, onions, and potatoes: Return the ham and onion mixture to the pan with the potatoes. If your pan is not oven-safe, transfer everything to an oven-safe baking dish.
  8. Add eggs and bake: Crack the eggs evenly over the ham and potato mixture. Place the pan in the preheated oven and bake for 10-15 minutes or until the eggs are cooked to your preferred level of doneness.
