For the Ham and Onion Mixture
- 1/2 yellow onion, diced
- 8 oz ham, diced
- 1 Tbsp honey mustard
- 2 Tbsp avocado oil (or another cooking oil)
For the Potatoes
- 1 1/2 lbs golden potatoes, diced
- 1 Tbsp honey mustard
- Salt, to taste
- Fresh cracked black pepper, to taste
- Additional oil for cooking potatoes (about 1 Tbsp)
For the Topping
- 4 eggs
Instructions
- Preheat Oven: Preheat your oven to 400℉ (200℃) to prepare for baking the final dish.
- Prepare Cooking Pan: Use a cast iron skillet or any oven-safe pan. Alternatively, use two pans if preferred.
- Cook Ham and Onion: Heat a cooking pan over medium-high heat and add 2 tablespoons of oil. Add the diced yellow onion and diced ham, cooking while stirring often until caramelized and golden brown.
- Add Honey Mustard to Ham Mixture: Stir in 1 tablespoon of honey mustard into the ham and onions, cooking for another minute to meld flavors. Remove from heat and set aside.
- Cook Potatoes: Add an additional tablespoon of oil to the pan along with the diced potatoes. Season with salt and black pepper. Cover and cook over medium heat, stirring occasionally, until potatoes are almost cooked through.
- Finish Potatoes: Remove the lid and continue cooking the potatoes until fully tender, stirring occasionally. Stir in 1 tablespoon of honey mustard for flavor.
- Combine Ham and Potatoes: Add the cooked ham and onion mixture back into the potatoes. If your cooking pan is not oven-safe, transfer this mixture into an oven-safe baking dish.
- Add Eggs and Bake: Crack the eggs evenly over the ham and potato mixture. Place in the preheated oven and bake for 10-15 minutes or until the eggs reach your desired doneness.
- Serve: Remove from the oven and serve immediately while hot for the best taste and texture.
