Ingredients
Scale
Chicken and Nuts
- 3 tbsp sesame oil
- 1 lb chicken breast, cut into bite-sized pieces
- ¼ cup cashews
- 1 dried chili
- Salt and pepper to taste
- 1 sliced green onion for garnish
- 1 tsp sesame seeds for garnish
- 1 bell pepper, chopped (optional)
Flavorings
- 1 tbsp minced ginger
- 1 tbsp minced garlic
Sauce
- 2 tbsp tamari soy sauce
- 2 tbsp keto-friendly chili sauce
- 2 tbsp keto-friendly honey
- 1 tbsp vinegar
- 1 tsp arrowroot
- Salt and pepper to taste
Instructions
- Toast the Cashews: Toast the cashews in a dry pan over low to medium heat, stirring frequently. Once they become lightly golden and fragrant, remove them from the pan and set aside to avoid burning.
- Prepare the Sauce: In a small bowl, combine the tamari soy sauce, keto-friendly chili sauce, keto-friendly honey, vinegar, arrowroot, salt, and pepper. Stir thoroughly until the arrowroot is fully dissolved, then set the sauce aside.
- Cook the Chicken: Heat the sesame oil in a skillet over medium-high heat. Add the chicken pieces along with minced ginger, minced garlic, dried chili, salt, and pepper. Cook the chicken for 5-10 minutes until golden brown and crispy on the outside. If using, add the chopped bell pepper halfway through cooking so it softens without becoming mushy.
- Add the Sauce: Pour the prepared sauce into the skillet with the chicken and vegetables. Let it simmer and bubble, stirring occasionally, for 4-5 minutes until the sauce thickens and coats the chicken nicely.
- Finish the Dish: Stir in the toasted cashews, mixing them evenly throughout the chicken and sauce. Garnish the dish with sesame seeds and sliced green onions for extra flavor and a beautiful presentation.
- Serve: Serve the keto cashew chicken hot over cauliflower rice or wrapped in fresh lettuce leaves for a satisfying low-carb meal.
Notes
- Use keto-friendly sweeteners like erythritol-based honey alternatives to keep the recipe low-carb.
- Arrowroot powder helps thicken the sauce but can be substituted with xanthan gum for a keto-friendly thickener.
- Bell pepper is optional but adds a nice crunch and color to the dish.
- Adjust the dried chili amount based on your preferred spice level, or remove it for a milder dish.
- Serving the dish over cauliflower rice keeps the recipe low in carbs and calories.
