  • 8 oz Ricotta cheese

Instructions

  1. Cook Meat and Onions: In a 4-quart soup pot over medium-high heat, cook and crumble the ground beef and Italian sausage. Add diced onion halfway through and cook until softened, about 5 minutes. Drain any excess grease. Add minced garlic and cook for 1 minute until fragrant.
  2. Add Seasonings: Stir in the tomato paste, dried oregano, dried basil, sugar, hot sauce, salt, pepper, and red pepper flakes. Mix well to coat the meat and develop flavors.
  3. Add Broth: Pour in the chicken broth. Use a silicone spatula to scrape and clean the bottom and sides of the pot, deglazing any browned bits for extra flavor.
  4. Add Tomatoes and Bay Leaf: Add the crushed tomatoes, undrained diced tomatoes, and bay leaf. Bring the soup to a boil, then reduce the heat and let it simmer gently.
  5. Simmer with Cheese Rind (Optional): If you have the rind from Parmesan cheese, add it into the soup while it simmers to enhance depth of flavor.
  6. Prepare Noodles: While the soup simmers, bring a pot of salted water to a boil. Taste the soup and adjust seasonings as needed since flavors will concentrate as it cooks.
