This Lazy Day Vegetable Lasagna is a foolproof, comforting dish made by layering frozen ravioli, fresh vegetables, Alfredo sauce, and mozzarella cheese in a slow cooker. It’s an easy, no-fuss alternative to traditional lasagna that delivers all the cheesy, savory satisfaction with minimal prep and hands-on time. Perfect for busy days, it features tender ravioli, shredded carrots, and fresh spinach cooked slowly until bubbly and melted to perfection.

Sauce & Cheese

  • 15 oz jar of Alfredo sauce
  • 8 oz pack of mozzarella, shredded
  • 1 cup panko breadcrumbs
  • 2 tablespoons butter, melted

Pasta

  • Two (25 oz) packs of frozen ravioli

Vegetables

  • 1 cup carrots, shredded
  • 2 cups handfuls of fresh spinach


Instructions

  1. Alfredo goes in the slow cooker: Pour the Alfredo sauce straight into the bottom of your slow cooker, spreading it evenly to form the base for your layers.
  2. Lay down the first ravioli layer: Place one layer of frozen ravioli over the Alfredo sauce, covering the sauce completely for a good foundation.
  3. Pop in the veggies: Sprinkle fresh spinach and shredded carrots evenly on top of the ravioli layer, distributing the vegetables throughout the dish.
  4. Drop the second round of ravioli: Add another layer of frozen ravioli over the vegetables to build the lasagna structure.
  5. Stack the layers again: Continue layering by alternating spoonfuls of Alfredo sauce over the ravioli, then add more vegetables and mozzarella as desired, making sure to use all your ingredients.
  6. Keep making those layers over and over: Repeat the layering process until you have used up all the ravioli, vegetables, and Alfredo sauce, ensuring the last layer is Alfredo sauce on top to keep it moist.
  7. Get the mozzarella ready: Sprinkle the shredded mozzarella cheese generously all over the very top layer to form a golden cheesy crust.
