Ingredients
Scale
For the Crust
- 1 1/4 cups (156 g) all-purpose flour
- 1/2 cup (113 g) unsalted butter, cold and cubed
- 3 tablespoons granulated sugar
- 2-3 tablespoons cold water
For the Filling
- 1 large egg
- 1/4 cup (60 ml) light corn syrup
- 1/4 cup (50 g) brown sugar, packed
- 1 tablespoon unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup (60 g) chopped pecans
Instructions
- Preheat and Prepare Tin: Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin to prevent sticking.
- Make the Crust Dough: In a medium bowl, combine the all-purpose flour, granulated sugar, and cold cubed butter. Use a pastry cutter or your fingers to mix until the texture resembles coarse crumbs, resembling crumbs but not fully uniform.
- Add Water to Form Dough: Add cold water one tablespoon at a time, mixing gently just until the dough begins to come together. Avoid overmixing to keep the crust tender.
- Roll and Cut Crust: Roll the dough on a lightly floured surface to approximately 1/8-inch thickness. Use a round cutter or glass rim slightly larger than the muffin tin openings to cut dough circles.
- Form Crust in Tin: Press each dough circle into the mini muffin tin compartments, shaping gently to form a crust base and sides.
- Prepare Filling Mixture: In a small bowl, whisk together the egg, light corn syrup, brown sugar, melted butter, and vanilla extract until smooth and well combined.
- Add Pecans and Filling: Spoon about 1 teaspoon of chopped pecans into each crust, then pour approximately 1 tablespoon of the filling mixture on top, covering the pecans evenly.
- Bake Pecan Pie Bites: Bake in the preheated oven for 20-25 minutes or until the filling is set and the crust turns golden brown at the edges.
- Cool: Allow the pecan pie bites to cool in the tin for 10 minutes, then transfer them to a wire rack to cool completely for best texture.
- Serve: Serve at room temperature or slightly warmed. Optionally, dust with powdered sugar for an elegant finishing touch.
Notes
- Use cold butter and water to ensure a flaky crust texture.
- Do not overmix the dough to avoid tough crust.
- Ensure pecans are evenly distributed to maintain consistent flavor and texture in each bite.
- Allow the bites to cool completely for the filling to fully set before serving or storing.
- Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
