  • 1 teaspoon vanilla extract
  • 1/2 cup (60 g) chopped pecans


Instructions

  1. Preheat and Prepare Tin: Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin to prevent sticking.
  2. Make the Crust Dough: In a medium bowl, combine the all-purpose flour, granulated sugar, and cold cubed butter. Use a pastry cutter or your fingers to mix until the texture resembles coarse crumbs, resembling crumbs but not fully uniform.
  3. Add Water to Form Dough: Add cold water one tablespoon at a time, mixing gently just until the dough begins to come together. Avoid overmixing to keep the crust tender.
  4. Roll and Cut Crust: Roll the dough on a lightly floured surface to approximately 1/8-inch thickness. Use a round cutter or glass rim slightly larger than the muffin tin openings to cut dough circles.
  5. Form Crust in Tin: Press each dough circle into the mini muffin tin compartments, shaping gently to form a crust base and sides.
  6. Prepare Filling Mixture: In a small bowl, whisk together the egg, light corn syrup, brown sugar, melted butter, and vanilla extract until smooth and well combined.
  7. Add Pecans and Filling: Spoon about 1 teaspoon of chopped pecans into each crust, then pour approximately 1 tablespoon of the filling mixture on top, covering the pecans evenly.
