Description

This Quick & Easy Strawberry Coulis is a luscious, smooth strawberry sauce made from fresh or frozen strawberries, sugar, and lime juice. Perfectly sweet and tangy, it enhances desserts like ice cream, pancakes, and cakes, or can be used as a flavorful base for cocktails and mocktails. The coulis simmers gently on the stovetop and is blended to a silky texture, providing a versatile fruit sauce that can be stored refrigerated or frozen for later use.

Ingredients

Scale

Ingredients

  • 450 g fresh strawberries (or frozen)
  • 80 g granulated sugar
  • 1 tablespoon lime juice (or lemon juice)

Instructions

  1. Prepare the Strawberries: If using fresh strawberries, wash them thoroughly, remove the stems, and hull each strawberry. Then slice them into quarters to ensure even cooking.
  2. Simmer the Mixture: In a saucepan, combine the sliced strawberries, granulated sugar, and lime juice. Place over medium-high heat and bring the mixture to a simmer. As it begins to boil and bubble, reduce the heat to medium and continue simmering for about 10 minutes. Stir frequently until the strawberries break down and soften completely. If using frozen strawberries, expect a few extra minutes for the mixture to soften.
  3. Blend to a Smooth Sauce: Transfer the hot strawberry mixture to a blender or food processor. Pulse or blend until you achieve a smooth, sauce-like consistency. Alternatively, you can use a stick blender directly in the pot—exercise caution with the hot liquid to avoid burns.
  4. Cool and Store: Pour the finished strawberry coulis into a clean jar or container and allow it to cool to room temperature before sealing with an airtight lid.
  5. Storage and Serving: Refrigerate the coulis in an airtight container for up to 2 weeks; note that it will thicken once chilled. For longer storage, freeze in suitable containers or ice cube trays for up to a couple of months, and defrost overnight in the refrigerator before use.
  6. Serving Suggestions: Serve the strawberry coulis over ice cream, pancakes, waffles, meringue, or use it as a filling for cupcakes and cakes. It also pairs wonderfully drizzled over cheesecakes and panna cotta, and makes a flavorful base for cocktails and mocktails.

Notes

  • Frozen strawberries can be used as an alternative to fresh; allow extra simmering time if using frozen.
  • Adjust sugar quantity depending on the sweetness of the strawberries and personal preference.
  • Use lime juice for a bright citrusy note or substitute with lemon juice if preferred.
  • Handle hot liquids carefully when blending to avoid burns.
  • The coulis will thicken after refrigeration, so adjust consistency with a splash of water or juice if needed before serving.
