Description

A classic roast chicken recipe featuring a whole chicken seasoned with fresh herbs, garlic, lemon, and olive oil, roasted to golden perfection. This simple yet flavorful dish is perfect for a comforting family meal.

Ingredients

Scale

Main Ingredients

  • 1 whole chicken (4-5 pounds)
  • 2 tablespoons extra virgin olive oil
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 4 whole garlic cloves
  • 1 lemon, halved
  • 1 tablespoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat the oven to 425°F (220°C) to prepare for roasting the chicken at a high temperature that will help achieve a crispy skin.
  2. Prepare Chicken: Rinse the chicken thoroughly under cool water and pat dry completely using paper towels to ensure the skin roasts properly and becomes crispy.
  3. Season Chicken: Rub the entire chicken evenly with extra virgin olive oil. Season generously inside and out with salt and black pepper to enhance flavor.
  4. Stuff Chicken: Stuff the cavity of the chicken with whole garlic cloves, lemon halves, and the fresh rosemary and thyme sprigs. This infuses the meat with aromatic flavors during roasting.
  5. Roast Chicken: Place the chicken breast-side up in a roasting pan. Roast in the preheated oven for 1 hour to 1 hour and 15 minutes, until the skin is golden brown and the internal temperature reaches at least 165°F (74°C) for safe consumption.
  6. Rest and Serve: Remove the chicken from the oven and let it rest for at least ten minutes before carving. This resting period allows the juices to redistribute, keeping the chicken moist. Optionally, drizzle with pan drippings for extra flavor.

Notes

  • Ensure the internal temperature of the chicken reaches at least 165°F (74°C) using a meat thermometer for food safety.
  • Letting the chicken rest before carving helps retain juices and enhances tenderness.
  • You can add additional herbs or spices according to your taste preference.
  • Use the pan drippings to make a flavorful gravy or sauce if desired.
