Instructions

  1. Combine ingredients: In a saucepan, combine the chopped pineapple, 1/2 cup of water, white vinegar, honey, soy sauce, minced ginger, and garlic. Stir well to mix all the flavors together.
  2. Simmer the sauce: Bring the mixture to a gentle simmer over medium heat. Reduce the heat to low and allow it to simmer for 10 minutes, stirring occasionally, until the pineapple softens and releases its juices.
  3. Make the slurry: While the sauce simmers, mix the cornstarch with 2 tablespoons of water in a small bowl to create a smooth slurry without lumps.
  4. Thicken the sauce: Stir the cornstarch slurry into the simmering sauce. Add the red chili flakes and salt to taste. Continue to simmer the sauce gently for an additional 5 minutes, stirring frequently until the sauce thickens to a glossy consistency.
  5. Cool and serve: Remove the saucepan from the heat and allow the sauce to cool. It will continue to thicken as it cools. Transfer the sauce to a serving dish or storage container and use as a dip, glaze, or condiment as desired.
