Instructions

  1. Preheat: Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper to prepare for roasting.
  2. Toss & Roast: In a large bowl, combine cubed sweet potatoes, sliced smoked sausage, red bell pepper, and red onion. Toss everything with olive oil, salt, and black pepper until evenly coated. Spread the mixture in a single layer on the prepared sheet pan. Roast in the oven for 20–25 minutes, stirring halfway through to promote even caramelization. The sweet potatoes should become fork-tender and develop a slightly caramelized exterior.
  3. Make the Glaze: While the veggies and sausage roast, whisk together honey, minced garlic, Dijon mustard, soy sauce, smoked paprika, and red pepper flakes (if using) in a small bowl to create a sticky, flavorful glaze.
  4. Glaze & Finish: Remove the sheet pan from the oven and drizzle the prepared honey garlic glaze over the roasted ingredients. Toss gently to coat everything evenly. Return the pan to the oven and roast for an additional 5–7 minutes until the glaze becomes glossy and slightly sticky.
  5. Serve: Garnish the finished dish with fresh parsley, green onions, or sesame seeds if desired. Serve on its own or alongside rice, quinoa, or mixed greens for a complete meal.
