Description

This Winter Vegetable Quiche recipe combines a flaky pre-made pie crust with sautéed kale, butternut squash, mushrooms, and onions, all bound together with a creamy egg custard and topped with melted cheddar cheese. Perfect for cozy winter meals, this quiche offers a delicious way to enjoy seasonal vegetables in a savory and comforting dish.

Ingredients

Scale

Pie Crust

  • 1 pre-made pie crust

Vegetables

  • 1 cup chopped kale
  • 1 cup diced butternut squash
  • 1 cup sliced mushrooms
  • 1/2 cup diced onion

Custard & Cheese

  • 4 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the ideal temperature for baking the quiche evenly.
  2. Sauté Vegetables: Heat a skillet over medium heat. Add the diced onion, sliced mushrooms, and butternut squash; sauté until tender, about 5 to 7 minutes. Then add the chopped kale and cook until wilted, about 2 to 3 minutes. Remove from heat and set aside.
  3. Prepare Custard Mixture: In a mixing bowl, whisk together the 4 large eggs, 1 cup of milk, salt, and pepper until fully combined and slightly frothy, forming the quiche custard base.
  4. Assemble Quiche: Place the pre-made pie crust into a pie dish. Evenly distribute the sautéed vegetables over the crust. Pour the egg mixture evenly over the vegetables, then sprinkle shredded cheese over the top for a flavorful finish.
  5. Bake: Transfer the assembled quiche to the preheated oven and bake for 35 to 40 minutes, or until the center is set and the top is golden brown.
  6. Cool and Serve: Remove the quiche from the oven and let it cool for several minutes before slicing. Serve warm or at room temperature for best taste.

Notes

  • You can substitute kale with spinach or swiss chard if preferred.
  • Feel free to use your favorite cheese such as Gruyère or mozzarella for different flavors.
  • Ensure the vegetables are fully cooked and drained of excess moisture to prevent a soggy crust.
  • Letting the quiche cool slightly before slicing helps it set properly and eases cutting.
  • This quiche can be prepared a day ahead and reheated gently in the oven.
