Salad Base

  • 3 to 4 Romaine lettuce hearts, rinsed then chopped
  • 1 cup black beans, rinsed
  • 1 large tomato, chopped OR 1 cup sliced cherry tomatoes
  • 1/2 cup shredded cheddar cheese

Crunch and Dressing

  • 1 ½ cups nacho cheese Doritos, broken into bite-size pieces
  • 1 cup Catalina dressing OR your favorite salad dressing (ranch dressing recommended as alternative)
  • Fresh cilantro (optional, for garnish)


Instructions

  1. Cook the Ground Beef: Brown and crumble the lean ground beef in a large skillet over medium-high heat. Once fully cooked, drain any excess grease thoroughly. Add the taco seasoning packet along with the specified amount of water according to the seasoning instructions. Stir the mixture well, bringing it to a boil. Then, reduce the heat to low and allow it to simmer for 10 minutes. Remove from heat and let the beef cool slightly to prevent wilting the lettuce later.
  2. Assemble the Salad Base: In a large salad bowl, combine the chopped Romaine lettuce, rinsed black beans, and chopped tomato or sliced cherry tomatoes. Add the shredded cheddar cheese followed by the cooled ground beef mixture. Gently toss all ingredients together to mix evenly. At this stage, the salad can be served immediately or chilled in the refrigerator until serving. Avoid adding the Doritos chips now to keep them crunchy.
  3. Add Chips and Dressing Just Before Serving: When ready to serve, sprinkle the broken Doritos chips over the salad and drizzle the Catalina or your favorite dressing on top. Toss gently to coat all ingredients and distribute the dressing evenly. Optionally, garnish with fresh cilantro leaves for added flavor and color. Serve the salad immediately to enjoy the perfect crunch and freshness.
