Description

This Easy Thai Chicken Satay & Peanut Sauce recipe combines tender grilled chicken marinated in fragrant soy, fish sauce, and spices, paired perfectly with a creamy, tangy peanut dipping sauce. Ideal for a quick, flavorful appetizer or light meal that brings authentic Thai flavors to your table.

Ingredients

Scale

Chicken Satay Marinade

  • 1 pound chicken breast, cut into strips
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon sesame oil

Peanut Sauce

  • 1/2 cup peanut butter
  • 1/4 cup coconut milk
  • 1 tablespoon lime juice
  • 1 teaspoon chili paste

Instructions

  1. Prepare the marinade: In a bowl, combine soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, and sesame oil. Stir well to dissolve the sugar and blend the flavors.
  2. Marinate the chicken: Add the chicken strips into the marinade, coating them thoroughly. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.
  3. Thread and grill the chicken: Thread the marinated chicken strips onto skewers. Preheat your grill to medium-high heat and cook the skewers for about 4-5 minutes per side, or until the chicken is fully cooked through and has nice grill marks.
  4. Prepare the peanut sauce: In a separate bowl, mix together the peanut butter, coconut milk, lime juice, and chili paste until smooth and creamy. Adjust seasoning with additional lime juice or chili paste if desired.
  5. Serve: Arrange the grilled chicken satay on a platter and serve alongside the peanut dipping sauce for a delicious, authentic Thai appetizer or light meal.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • If you don’t have a grill, you can cook the chicken skewers under a broiler or on a stovetop grill pan.
  • The chili paste can be adjusted to taste for mild or spicier sauce.
  • For a gluten-free version, use tamari or gluten-free soy sauce.
  • This recipe can be doubled to serve a larger crowd.
