Description

This traditional Indian-inspired sweet treats combines creamy ricotta cheese with the rich sweetness of condensed milk and aromatic cardamom. Flavored with optional ghee and rose water, then garnished with pistachios and saffron, this no-bake dessert is simple to prepare and perfect for festive occasions or a delightful everyday indulgence.

Ingredients

Scale

Base Ingredients

  • 15 oz whole milk ricotta cheese (1 container)
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 teaspoon ground cardamom

Optional Flavor Enhancers

  • 1 tablespoon ghee (optional, for flavor)
  • 1 tablespoon rose water (optional)

Garnish

  • 1/4 cup chopped pistachios
  • A few strands of saffron (optional, for garnish)

Instructions

  1. Combine Ricotta and Condensed Milk: In a non-stick or heavy-bottomed pan, add the ricotta cheese and sweetened condensed milk. Mix well to blend the two ingredients smoothly.
  2. Cook the Mixture: Turn the heat to medium and stir continuously for 20 to 25 minutes until the mixture thickens and starts leaving the sides of the pan, indicating it’s cooked and reduced enough.
  3. Add Flavorings: Stir in ground cardamom powder, and if using, add ghee and rose water. Mix thoroughly to combine all flavors evenly.
  4. Transfer to a Dish: Turn off the heat and immediately pour the mixture into a greased or parchment-lined square or rectangular dish. Spread it evenly to form a flat layer.
  5. Garnish: Sprinkle chopped pistachios and saffron strands over the top for a beautiful and flavorful finish.
  6. Cool and Set: Allow the mixture to cool completely at room temperature, or place it in the refrigerator until it firms up and sets.
  7. Serve: Cut the set dessert into squares and serve chilled or at room temperature for a delightful treat.

Notes

  • Continuous stirring during cooking prevents the mixture from sticking and burning.
  • Ghee adds a rich buttery flavor but can be omitted for a lighter dessert.
  • Rose water and saffron are optional but impart an authentic aromatic touch.
  • Ensure the dish used for setting is greased or lined to easily remove the dessert once set.
  • This dessert can be stored covered in the refrigerator for up to 3-4 days.
  • For a vegan option, substitute ricotta and condensed milk with plant-based versions.
