Ingredients
Scale
Crust and Chocolate Layer
- 1 pre-made graham cracker crust (9-inch)
- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
- 1/4 cup butter
Caramel Pecan Topping
- 1/2 cup brown sugar, packed
- 1/4 cup light corn syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 1/2 cups pecans, chopped
Garnish (Optional)
- 1/2 cup whipped cream
- 1/4 cup chocolate shavings
Instructions
- Heat the Cream: In a medium saucepan, heat the heavy cream over medium heat until it just begins to simmer, taking care not to let it boil.
- Melt Chocolate Mixture: Add the semi-sweet chocolate chips and butter to the heated cream, stirring constantly until the mixture is smooth and fully combined. Remove from heat and allow it to cool for 10 minutes.
- Prepare Chocolate Layer: Pour the chocolate mixture into the pre-made graham cracker crust and spread evenly. Place in the refrigerator to chill for 2 hours until the chocolate layer is set.
- Cook Caramel Base: In a clean saucepan, combine brown sugar, light corn syrup, vanilla extract, and salt. Cook over medium heat, stirring constantly until the sugar dissolves and the mixture starts to bubble.
- Add Pecans: Stir chopped pecans into the bubbling caramel mixture. Continue cooking 1-2 minutes until the pecans are well coated and the caramel has thickened.
- Cool and Layer Caramel: Remove the caramel-pecan mixture from heat and let cool for 5 minutes. Then pour it evenly over the chilled chocolate layer in the crust.
- Chill Pie: Return the pie to the refrigerator and chill for an additional hour or until the caramel topping is firm and set.
- Garnish and Serve: Just before serving, optionally top the pie with whipped cream and sprinkle with chocolate shavings for an elegant finish.
Notes
- Ensure the heavy cream does not boil to prevent burning or curdling.
- Use fresh pecans for the best texture and flavor.
- Chilling times are essential for the pie layers to set properly; do not rush them.
- For a nut-free version, omit pecans and use extra caramel topping or chocolate shavings.
- Store pie covered in the refrigerator and consume within 3 days for optimal freshness.
